Tall Buttermilk Pancakes

Flaky layered buttermilk biscuits under a peppery, sage-scented country gravy built on pork drippings.
Everything cold, oven hot. If the butter softens while you work, slide the whole tray into the freezer for 10 minutes. Warm butter means the fat blends into the flour instead of staying in sheets, and you get a scone rather than a biscuit.
The gravy thickens as it cools. Pull it off the heat one notch looser than you want it. If it stiffens up before serving, whisk in warm milk a splash at a time.
Sausage fat is the flavor. If your sausage is lean and renders less than 3 tablespoons, make up the difference with butter before adding the flour.
