Overnight-brined chicken in a craggy, well-seasoned crust fried in a Dutch oven until shatteringly crisp.
Brine long, dry briefly. Eight hours is the minimum for the salt to reach the middle of a thigh. Twenty-four is better. Past that, the acid starts to make the surface mushy.
Hold 300 to 325°F, not 350°F. 350°F is the starting temperature; the chicken pulls it down, and that lower range is where a bone-in piece cooks through before its crust goes too dark.
