Ingredients

  • 1 ¾ cups graham cracker crumbsabout 12 full sheets
  • 2 tablespoons granulated sugarfor the crust
  • 6 tablespoons unsalted buttermelted
  • 32 ounces cream cheesefull fat, at room temperature
  • 1 ½ cups granulated sugar
  • ¼ cup sour creamat room temperature
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • ½ teaspoon kosher salt
  • 4 large eggsat room temperature
  • 1 large egg yolkat room temperature

Tips

Room temperature is not optional. Cream cheese, eggs and sour cream all at 68 to 70°F emulsify into a smooth batter. One cold ingredient reintroduces lumps at the last moment.

The water bath does two things. It caps the outside temperature near 212°F and keeps the oven humid so the surface stays flexible. Skip it and you get a browned, domed, cracked cake.

A crack is cosmetic. If one opens up anyway, the cake still tastes right — cover it with sour cream topping or fruit and move on.

Variations

  • Sour cream top: Whisk 1.5 cups sour cream with 3 tablespoons sugar and 1 teaspoon vanilla, spread over the just-baked cake and return it to a 325°F oven for 8 minutes.
  • Strawberry: Simmer 1 pound of hulled strawberries with 1/3 cup sugar and 1 tablespoon lemon juice for 10 minutes and cool before spooning over slices.
  • Espresso: Dissolve 2 tablespoons of instant espresso powder in the vanilla and add a layer of chocolate cookie crumbs to the crust.
